The Pavillon des Ibis, an imposing Anglo-Norman building in the middle of an island in Yvelines, is undergoing a renaissance under the direction of two-star chef Guy Martin.
Over the past few years, protecting the French heritage has become a national passion. A great example can be found in Vésinet, an affluent city in Yvelines, where the Pavillon des Ibis has recently reopened its doors. Following a long hiatus, this institution, which was first built on the island in the 1920s, is now back in business thanks to Guy Martin, the two-star chef behind the Parisian restaurant Le Grand Véfour.

Architect Christian de Beauvais and artistic director Jérôme Faillant Dumas also contributed to the project. The romantic atmosphere created by the adjacent pond provided the duo with a source of inspiration when renovating the former casino, where elegantly dressed ladies once strolled with dandies decked out in hats and cans. This timeless site has been transformed into a winter garden featuring part-colonial, part-exotic decor.
A new take on bourgeois cuisine
Beneath its rotunda and bay windows, the dining area offers a bustling, bucolic setting complete with wicker-panelled walls and a ceramic-tiled feather mosaic. The restaurant’s menu offers seasonal products, bourgeois-inspired recipes, and flavours from both land and sea that offer a blend of traditional and exotic fare—exactly the kind of restaurant that keeps lovers of fine dining coming back for more.
