In the kitchens of L'Oasis, a gastronomical flagship by the sea, talents cumulate with the arrival of Alain Montigny, a chef who worked at the Hôtel de Crillon with Eric Frechon,Yves Camdeborde and Christian Constant before receiving a star at the Carmontelle, in Chantilly, to play a four-hand partition.
A twist of modernity in the kitchen
Assisted by Nicolas Davouze, Bocuse d’Or France 2015, he elaborates a streamlined cuisine featuring high-end products with a small touch of modernity, to enhance them while never altering their original savor. Sign of the restaurant's quality, you just might run into Stéphane Raimbault, who has just been awarded the Gault&Millau d'Or for the PACA region—each morning he goes to the Forville Market, in Cannes, to select and bring back the best catch of the day.
Cult signature recipes
And while the menu features a few Japanese-style touches, the Med orientation of this cult establishment, sheltering a bakery-pastry and a cooking school, is clearly affirmed by this talented trio of chefs. King Crab Royal, sea bass in a golden crust, grilled turbo with greenpeas and millefeuilles of foie gras with artichoke are some of the signature dishes that make L'Oasis shine.
