1. Pavyllon - Yannick Alléno

"I am offering a form of leisure on the Champs Élysées to the clientele wishing for a cuisine to reach out beyond the ordinary towards excellence—and that this excellence may seem familiar."  In addition to his 3 stars, and the one awarded to Abysse, a sushi counter, the chef has opened at Pavillon Ledoyen a space where diners can watch the actual creations of the plates—just like at the theater. The heritage of French cuisine is magnified here by the influence of Japanese, Nordic and Italian culinary traditions. A hot and cold sole with black truffle, crispy foie gras with white truffle from Alba in an Albuféra sauce, tortelli of squash with melted butter and parmesan, steamed brill, grade 4 Wagyu, Strogonoff style—a wide array of gourmets wonders with a cellar comprising 1,300 references. 2. Mr T - Tsuyoshi Miyakazi

"A cuisine executed under the eyes of the clients, original dishes and a very good quality/pleasure/price ratio are the assets of this upscale restaurant". In the High Marais, Mr T, aka Tsuyoshi Miyakazi, formerly at Passage 53, is on deck. Street art fresco, scrubbed stones and panoramic counter, he sculpts his burger with a blow torch while developing the fusion of savors with burnt mackerel, lemon/raifort sauce, a shoulder of lamb kebab with tzatziki and farm range pig shank with carrots and mimolette cheese in a a gastronomic version, without forgetting a "Food & Drinks" pairing. 3. Eclipses - Cyril Choisne

"I wanted a cosy and romantic ambiance to serve a French gastronomic cuisine." After working with all the leading chefs in Paris, Cyril Choisne flies his own colors on the Left Bank, where he offers the essence of a tradition that flirts with modernity. Respecting the seasons is his new religion and this fall, the chef, who cooks his own breads, presents them with pink radish, celery and bib lettuce with saffron savors, foie gras of duck with truffles and glazed beet along with sweet breads cooked over rosewood—all with a strong home made touch. 4. Madame Claude - Ludovic Perraudin

"The spirit of the place, is to offer an authentically bourgeoise cuisine—dishes with sauces is the story of my life." Trained at Ecole Ferrandi, Troisgros, Taillevent, Guy Savoy and L'Élysée, chef Ludovic Perraudin has transformed his high-end grocery shop at the La Motte-Piquet-Grenelle district into a gourmet and roguish venue. Insiders come enjoy his pâté en croûte with cèpes and chestnuts, smothered in veal juice, farm range poultry with crayfish, red pasta with bisque and deep dish duck pie with foie gras. 5. La Scène - Stéphanie Le Quellec

"Opening my own house was my dream since cooking school, like one goes into religion." Top Chef 2011 winner, than two-start chef at the Hôtel Prince de Galles, Stéphanie Le Quellec hosts diners in a streamlined boat-style decor, in the continuation of the Hôtel Bristol. Here she prepares delicate dishes, such as this organic egg from Île-de-France farms, warm yolk with cèpes mushrooms, rock redsnammer rouget cooked in bouillabaisse juice and Scottish grouse pressed with foie gras, in a cereal crust.
